Rosemary can be used to flavour so many Italian dishes, particularly roasted and grilled meats, poultry and fish. It also goes well with pulses, especially chick peas, cannellini beans and lentils, with potatoes naturally (roast potatoes are never served without rosemary) and also aubergines, courgettes and pumpkin.
